It helps hide the smell of adreniline on your breath from nerves.

I don't think one odor really, effectively, "hides" another odor. The dog will just smell both.
I think nerves are sensed by the dog in your energy, and seen in your body language. Two thing unaffected by peppermint. Peppermint IS, however, usually effective relief for people who get an upset stomach from nerves.
