Need good dinner ideas for date night

Making dinner for my BF on Saturday to celebrate his new job. I have been looking through all of my (many, many) cookbooks, and am still uninspired. I need some ideas of a good meal to make. I am going to make an apple pie, but am clueless for the main dish.
There are a couple of restrictions. He HATES mushrooms (though I could eat them by the bowlful). I am a bit intimidated to make beef for him still (raised on a cattle farm), so I am thinking chicken or maybe something with shrimp.
I have to work all day, so it can't take too long. Also, he LOVES anything with cheese...the more the better.
Also, sigh, no spinach, so my spinach stuffed chicken with feta is out.
Ideas? :|

Well, since I can't cook, I would just have sex with him, if he were my boyfriend.

Have you checked the Pioneer Woman cooking section? She lives on a cattle ranch, so she has a lot of good beef recipes (that would probably go over well with Patrick)...but has a lot of really easy, yummy chicken recipes...and a lot of shrimp recipes (I haven't tried any...since I don't eat seafood). The site is easy to search...

Totally agree. Any guy in the world would take sex over any food, or other gift lol.

But I can't cook so I would say maybe spaghetti and garlic bread? It isn't very fancy, but it is good :D
