cleavers at walmart? seriously?!?! I'm gettin' me one of them! That would make things sooo much easier next time. Chopping them in half was a royal pain in the arse.

Do you have a pair of poultry shears? they cut through backs with little to no effort, they should make it through turkey necks without much trouble if you aim between the bones.

Adult turkey necks are very long, the juvenile/young necks aren't much bigger than chicken necks. We don't feed the smaller necks because a certian pig swallows them whole and chokes.

I you have minimally more space, I separated chicken feet recently (you could do this for necks you've cut in half?) with waxy freezer paper: 2 at a time wrapped in paper and then all in a gallon zip loc. I feel sooo guilty using my Cosco zip locs for a 1-way trip to the trash via daily dog food that I try to combine things when I can - (tho haven't scoped them out at the .99 cent store yet). I even sometimes store 2 meals-worth of chicken, usually, in one bag when I have room, and use 1 bag for servings. ...and I keep forgetting to go shopping for a big fat cleaver!!! I can't wait - my 12" chef's knife is fun but only goes so far.
